Found this online, and trying it very soon.

INGREDIENTS

2 whole bone-in chicken breasts, with skin
2 teaspoons Chinese five-spice powder
1 teaspoon garlic powder
salt and pepper to taste
1 tablespoon olive oil

DIRECTIONS

1. Rinse chicken breasts and pat dry. Sprinkle with five-spice powder, garlic powder, salt and pepper. Wrap tightly in aluminum foil and refrigerate to
'marinate' for at least 2 hours.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Remove wrapping from chicken breasts and place them in a lightly greased 9x13 inch baking dish. Drizzle with olive oil and bake at 350 degrees F (175
degrees C) for 45 minutes, or until cooked through and juices run clear.

hmm personally, i'd use boneless skinless chicken breast, and not sure i'd measure the dry ingredients either, just sprinkle enough on, wrap it, and fridge it for a bit. then use a cooking thermometer to test for doneness while cooking. like i said though i'm definitely gunna try it, i'll post results when i do.
